It was my husband's birthday at the end of December. He's 42, which is a lot older than I am. Carl always gets ripped off in the birthday department because it is right after Christmas and our anniversary and the day before New Years. We're all sick of parties by then.
One thing in Carl's birthday history remains constant and fulfilled: Cherry Cake. It is his favorite. And it is one recipe I know by heart, besides how to make a quesadilla. So for your dining pleasure:
Cherry Cake
- One white cake made from a mix. Did you know if you keep cake mix in your pantry for over a year then the cake won't rise? I just learned that. I had to buy more. So much for cake food storage. What are we supposed to eat for dessert when the world ends? Wheat mush with sugar? Yum.
- Two cans pie cherries with syrup. Don't buy the cherries in water. They aren't the same. If you happen to need some cherries in water, come over to my house. You can have them, along with all of the expired cake mixes.
- One brick cream cheese. Don't bother with the low-fat kind because you aren't going to eat this cake anyway.
- One carton heavy whipping cream. Not the smallest little carton, the medium kind. It might be a pint but I'm not sure.
- Dash of sugar. Not nearly enough.
Blend the cream cheese, whipping cream, and sugar until it looks frothy and delicious. Sweetly offer a beater to any suckers standing around. Laugh when they make a face and offer them a bagel to go with it. Spread the white stuff all over the cake, then dump the pie cherries on top. Refrigerate, then serve with candles. Make sure you have some ice cream on hand to serve those who prefer frosting on their cake instead of cheese.
Two great things about Bagel Cake are that it looks impressive and it lasts a long time because very few people actually like it. In fact, I don't even bother to make Carl's cake for him unless I know he's going to be around for a week or so. Otherwise it just goes bad. Carl loves his cake, and he loves that no one likes it. If you know Carl, you know it suits him perfectly.

That sounds like the perfect cake. Kind of like how I buy the 80% chocolate bars because they're so bitter that no one bugs me for a bite.
Crap. What to do with all those cake mixes? Perhaps I will send you my white cake mixes so you can make some extra bagel cakes.
It's 8:57. The pounding you will hear on your door in 6 minutes will be me. I love cream cheese frosting. However, you need to add more sugar, I can tell already. Powdered sugar makes it really fluffy. Cooking is one thing I know a little bit about.
Happy Birthday Carl, late but sincere.
PS. Celia did you see who the new apostle is? Hot, Hot, Hot!!!
It is yucky. I've tried it. Cruel, cruel Carl.
Happy Birthday Carl! :)
Why is it called a bagel cake? I'm so confused.
And why do you love Elder Uchtdorf? (or however you spell it...)
Hmmmm...
Cherries: good
Cream cheese and whipping cream: so good
Sugar: good
Cake: obviously, good
What's not to like?
It's horrible to attend a birthday and not like the cake. The least you could do is buy a costco cake or something.
but you are right, this cake is great with bagels on the side.
He is very wise to choose a cake that nobody else likes! Mmmmmmmore for him.
Not a cherry fan...but what the birthday boy wants he should get! You are a stellar wife.
I think I would scrape all the cherries and cheese off, then dip bites of cake into a container of frosting and eat a slice myself that way. Have you tried that? Seems like such a waste of a good cake, sitting in the fridge under all that cheese.
I'm with Jessica, Bagel cake? I was waiting for the part that called for bagels and it never came
when the food storage cakes expire, and the world comes to an end, there's always honey glazed toasted bulgur.
i hear it goes well with canned cherries in juice. it's the doomsday version of bagel cake.
Send me some. Now you have shown me one more way to eat my favorite diary item. I get it, it all makes sense to me, it is brilliant, it is almost as good as my cream cheese spread on a graham cracker with a dallop of jam.
I have an idea for the expired, non raising cake mixes. Pour it in a bowl, add everthing but the eggs and give each of your kids a spoon. They will think you are the best mom ever.
Happy bday carl.
I made my birthday cupcakes with old yellow cake mix. They were shorter than usual and turned out to be the perfect ratio of cake to icing, and you don't get any up your nose. Everyone thought I had made them that way on purpose. Try it, you'll like.

Yeah! Happy B-day Carl!!!
It looks so yummy, but you make it sound so nasty. It's really as bad as all that?
I think it looks DELICIOUS! But, I'd eat ANYTHING with sugar in it right now.
And I did get the Bagel Cake title. I'm not usually the most witty but I actually caught on this time. I'm a little proud.
I'm still lost on Bagel Cake...and I was raised Jewish.
I'm not so much for the cherries, but like PiP, I LOVE me some cream cheese...I could just eat a vat of the frosting...but I digress...Happy birthday, Carl.
Now for those cake mixes. You can use them to make cookies. Just add 1/2 cup vegetable oil and 2 eggs to the dry mix, and you have a fast, easy cookie. We make them when there's nothing else to make for FHE treats.
It all sounds good until you get to the cherry part. Cherries. Ick. I think I'd make it and buy some sweetened strawberries in the frozen section and put those on it instead. YUM.
Bring it to blogapalooza.
I just want to dive into that cake. And crap! I have seriously 2 DOZEN cake mixes that are at least 9 mos old! What am I supposed to eat when I'm hunkerin' in my bunker? Because baked goods are pretty much the extent of my food storage.
P.S. I'm slapping you up on my sidebar so I don't forget to check your blog. Let me know if permission is denied.
